SAMPLE RECIPE
Biscochitos
Our good friend, Mrs. Blanche Nelson Goldsmith, a native New Mexican and co-founder of the Daughters of New Mexico, makes these delicious New Mexican cookies every Christmas. This recipe, given to Mrs. Goldsmith by her aunt, is one of the best we've ever tasted.

Preheat oven to 350°.
1 cup SUGAR
1 lb. LARD*
2 EGGS
1 tsp. VINEGAR
6 cups all-purpose FLOUR
1 tsp. SALT
1 Tbsp. BAKING POWDER
1 Tbsp. ANISE SEED
1/3 cup ORANGE JUICE
2/3 cup SUGAR
1 tsp. CINNAMON

Cream 1 cup sugar and the lard in a large bowl until fluffy. Add eggs and vinegar; beat well. Add flour, salt, baking powder, and anise seed alternately with orange juice, mixing well after each addition.
Divide into 4 portions. Chill for 30 minutes. Roll and cut one portion at a time into small diamond-shaped cookies. Dip cookies into mixture of 2/3 cup of sugar and the cinnamon. Place on ungreased cookie sheet. Bake 10-12 minutes or until golden brown.

Yield: approx. 12 dozen.

*You must use lard for this recipe. We have found that any substitute does not work.
