SAMPLE RECIPE
Tofu-Nut Stir Fry
1 (12 oz.) TOFU CAKE, cubed 3/4 inch
1/2 cup TAMARI
1 Tbsp. VEGETABLE OIL
2 GARLIC CLOVES, diced
4 lg. ONIONS, diced
1 BELL PEPPER, sliced
3 CELERY STALKS, sliced
1 cup WATER CHESTNUTS, sliced
1 Tbsp. GINGER ROOT, grated
2 cups cold WATER
2 Tbsp. ARROWROOT POWDER
1/2 cup roasted CASHEWS

Marinate tofu pieces in tamari for 1 hour. Sauté in oil and brown tofu on all sides, set aside. Sauté garlic, onions, bell pepper, celery, chestnuts and ginger root until vegetables are tender. Mix cold water and arrowroot in separate bowl until smooth. When vegetables are done, add arrowroot mixture over them and simmer until sauce is thickened. Put vegetables in serving bowl and top with tofu and cashews. Serve over grains.

Serves 4-6.
