SAMPLE RECIPE
Chuckleberry Pie

3 cups WILD HUCKLEBERRIES
1 cup pitted FLATHEAD LAKE CHERRIES, or any SWEET CHERRY
1 Tbsp. CORNSTARCH
1 Tbsp. QUICK TAPIOCA
1 Tbsp. BUTTER
3/4 tsp. CINNAMON

In a bowl, combine huckleberries and cherries. Cover with plastic wrap and let set at room temperature overnight. In a saucepan, mix the resulting berry juices with cornstarch and tapioca and heat gently until thickened. Pour juice mixture over berries and fold gently together. Add filling to Low-Cholesterol Pie Crust and dot with butter and cinnamon. Add lattice crust to top and bake at 425° for 30 minutes, then reduce heat to 350° and bake for another 15 minutes or until crust is nicely browned. Allow pie to cool before serving.

Low-Cholesterol Pie Crust
2 cups UNBLEACHED FLOUR
Pinch of SALT
1/4 cup SKIM MILK
1/2 cup CANOLA OIL
In a bowl, sift flour with salt. In another bowl, use a fork to mix skim milk and oil. Combine all ingredients with as few strokes as possible. Refrigerate for at least an hour. Divide dough in half and roll out crusts between wax paper (cut one half for a lattice crust). Brush the bottom crust with a tiny bit of beaten EGG WHITE and bake at 425° for 1 minute. Allow crust to cool before adding filling.
Flathead Lake

At 28 miles long and up to 15 miles wide, Flathead Lake is the largest natural lake in Montana and the largest freshwater lake west of the Mississippi. Flathead Lake cherries are a popular crop in the area surrounding the lake. One other item of note: locals say this lake has its own monster, like Nessie of Scotland!
